Granola


Prep Notes

Line a sheet pan with parchment paper or a Silpat. Pre-heat oven to 350.

Ingredients

  • 2 cups of whole oats (not quick cooking) I use Bob's Red Mill
  • 1 cup nuts , roughly chopped. (I usually always have almonds and pecans in the house but use whatever you like. almonds, pecans, Brazil nuts, walnuts)
  • 1/2 cup raisins (or any dried fruit you have)
  • 1/4 cup mixture of seeds (chia, pumpkin, hemp, flax, sunflower) 
  • 1/4 cup of shredded coconut (unsweetened) (optional)
  • 1 tsp vanilla (add more or less depending on your preference)
  • 1 tsp cinnamon (add more or less depending on your preference)
  • 2 tbsp coconut oil (melted)(OR you can use butter)
  • 3 tablespoons sweetener- raw honey or 100% maple syrup

Directions

  1. Put everything in a bowl, mix it up and then spread it out on a sheet pan lined with parchment paper and toast in the oven until it starts to get a little golden brown. 
  2. Let it cool and serve! 
  3. Store the rest in a jar or air tight container. We eat it plain, with yogurt or with milk. (almond or cows milk.)

Notes

The great thing about this recipe is you can adjust the amounts of seeds, dried fruit & spice to your liking. You really can’t go wrong!
