Carrot Ginger Detox Soup

  • 2 pounds carrots, peeled and chopped)
  • 1-2 tablespoons extra virgin olive oil
  • 1 small onion, diced (can also use shallots or leeks)
  • 1 (2 inch piece) of fresh ginger, sliced (can use more if you like a stronger flavor)
  • 6 cups of chicken bone broth, chicken stock or water
  • salt + pepper to taste
  • garnish ideas: chives, pumpkin seeds, chopped herbs, cilantro


Heat the oil in a pot over medium heat. Add in chopped onions and sauté until translucent (about 5-7 minutes). Then add in remaining ingredients (except for garnishes) cover and simmer over medium heat until the carrots are soft. (about 30 minutes)

Use an immersion blender in the pot to puree or carefully pour into a high speed blender and puree in batches.
